"QIMERIONI" was founded in 2012 and is located in the village of Chumlaki, Gurjaani district, in the Kakheti region. Our vineyards are planted in the distinguished micro-zones of Kakheti, giving us a unique opportunity to grow high-quality grapes for the production of premium wines. Our winery is equipped with modern technology, a laboratory, and bottling facilities, ensuring complete monitoring and analysis of the winemaking process in accordance with international standards. Qimerioni Saperavi Qvevri
Taste characteristics
Rich with aromas of black cherry, blackberry, plum and earth. The palate is complex and multi-layered, with soft tannins and moderate acidity.
Making wine
It is placed in a qvevri, which gives the wine a natural structure and depth.
Food combination
It pairs perfectly with grilled red meat, steaks, aged cheeses, and rich pastas.
Qimerioni Kindzmarauli
Taste properties
A dry amber wine with distinctive aromas of tropical fruit, citrus, honey, and spices. The taste is rich and the texture is distinctive.
Composition
It is placed in a qvevri, which gives the wine a unique structure and depth.
Food pairing
Ideal with grilled fish, seafood, chicken dishes and light Asian cuisine.

Grape varieties
A deep dark colored grape with rich tannins and aromatic depth. Saperavi is used to make the pearls of Kakheti wines, such as Mukuzani and Kindzmarauli.
The most famous white variety of Georgian winemaking. It is distinguished by its light, cheerful acidity and fruity aromas.
A Kakhetian white variety that produces wines with an elegant, light and delicate structure, with pleasant herbal notes.
A precious white variety, distinguished by its exceptional sweetness and aromatic richness.
An international variety that Kimerion offers a new interpretation on local soil — a strong structure and a rich bouquet.
Purely expressed fruit aromas and soft tannins. Produces soft and refined red wines.

ადამიანი ღვინის უკან
ქიმერიონის ღვინის სულიერი ავტორი არის ადამიანი, რომლისთვისაც მეღვინეობა მხოლოდ პროფესია კი არა, ცხოვრების წესი და შემოქმედებაა.
ჩვენი მთავარი მეღვინე მრავალი წლის გამოცდილებით ქმნის ისეთ ღვინოებს, სადაც ქართული ტრადიციები ინარჩუნებს თავის სისუფთავეს, მაგრამ ერთვება თანამედროვე ტექნოლოგიები და მიდგომები.
ყოველი ქვევრში დადუღებული წვეთი, ყოველი ფრთხილად შერჩეული მტევანი — არის მისი ვნების, ცოდნის და დაუოკებელი სიყვარულის ნაყოფი.
